Honey and Lemon Cupcake Recipe

  • 50g softened butter
  • 150ml buttermilk
  • 225g plain flour
  • 150g oat bran
  • 2 level teaspoons baking powder 
  • 2 eggs
  • 50g caster sugar
  • 2 tablespoons honey
  • 3 teaspoons finely grated lemon rind

Preheat oven to 180ºC/350ºF & prepare your cupcake pan with cases.

Place the sugar, butter, buttermilk, eggs, honey and lemon rind in a bowl and mix well.

Gradually add the flour, baking powder and bran, mix gently until combined taking care not to overmix.

Fill your cupcake cases to just over halfway and place in the oven for 20-25 minutes until golden and springy to the touch.

Allow to cool before decorating.
