This basic cupcake recipe is one of our favourites as the flavour can be easily changed, see our ideas below.Ingredients
- 120g butter at room temperature
- 120g caster sugar
- 2 large eggs, at room temperature
- half a teaspoon vanilla extract
- 120g self-raising flour
Preheat the oven to 170C/325F/gas mark 3. Line a 12-hole cupcake pan with paper cases.
Using a food processor or a good old fashioned bowl and wooden spoon cream the butter and sugar until light and fluffy. Beat in the vanilla extract.
Gradually add the eggs with a little flour and beat until smooth.
Divide the mixture equally between the paper cases.
Bake for 15-20 minutes until golden and springy to the touch.
For different flavours try one of the following:
Lemon - leave out the vanilla extract and add the finely grated peel of half a lemon
Orange - leave out the vanilla extract and add the finely grated peel of half an orange
Chocolate - add 2 tablespoon of cocoa mixed in 1 tablespoons of hot water or 25g of melted plain chocolate
Chocolate Chip - add 50g of chocolate chips
